I think that the other dad was really good, but was just taken advantage of by the other mom, who is very, very evil. The dad tried to hold of as long as he could, and then when he finally broke and couldn't resist any longer (after warning Coraline), he attacked her under the force of the evil other mother.

Maybe the other dad tricked her into thinking he is a good dad, then at the right moment he back-stabbed her?
